The syllabus includes:
 Microbiological Hazards
 Food poisoning and its control
 Contamination Hazards and control
 HACCP from purchase to service
 Spoilage and preservation
 Personal Hygiene
 Cleaning and Disinfecting
 Food premises and equipment
 Food pests and control
 Food safety law and enforcement

The course includes a half hour exam and is delivered by qualified REHIS presenters and is supported with quizzes and videos.
